One thing that isn’t clear to me is what information is available in the car i.e. via the HDMI output and therefore not dependant on any cloud connection.

Basically, it’s all up to you. We provide a cloud solution for you to use, but if you would rather just use the local platform you can do that. The AutoPi Core (the software running on the device), will be open source. This means you will be able to customize it in just the way you want and install any plugin you want.
On the AutoPi dongle, there will be a local webserver, serving requests for clients connected on the hotspot. This webserver allows you to locally manage your device but does not give you the exact same dashboard as in the cloud solution.
